I never thought I could find something that I would love as much as photography.
Every lab class is a battle: 7am have to be in class, impeccable in our uniforms to help the Chef to prepare mise en place. 8am sharp we start cooking, as fast and good as we can cause we are always cutting short on time (today for example, we had to make 3 soups from scratch in 2 hours and a half), 11am the professors feedback is done and we are cleaning the whole kitchen till shine to the next class. Noon we are ready to go home.
It doesn’t matter if I had to wake up at 5am, if my back hurts more than ever or if the cut on my finger is bigger and worst than last week, it’s incredible how every new week I come back home happy and planning the next class, thinking what can I do to improve, how can I be faster and better. And all I can think is that I need to go buy 6lb of carrots to practice and practice and practice even more.
It’s crazy to think that you found yourself in life, that you have the blessing of knowing exactly what you want to work with and you are successful, then something changes and something that used to be a hobby gets all your attention and becomes a need.
I’m very grateful to be able to chase this dream. And even more grateful for the people who surrounds me. I probably wouldn’t have the courage of changing my whole life if it wasn’t for them.
All this yada yada yada it’s just to thank my friends and family. They are the greatest! I also want to say, as corny as it sounds that we always have time to do what we want! Always! IT’S NEVER TO LATE!
