I’ve learned to make this almond milk at the Healthy Desserts class at GBC. And even already having an almond milk recipe here on the blog I decided to post this one as well.
This almond milk is already sweetened (with dates!) and is a comfort food staple! You can use on your chai tea, coffee, smoothie or even drink it warm by itself!
I know a lot of people don’t like the idea of dates to sweeten food (I was one!), but I’ll tell you: this one is worth trying!
[yield around 700ml]
1 cup almonds (160g)
1/3 cup pitted dates (40g)
½ vanilla beans (or ½ tsp vanilla extract)
* usually I put the cup of almond in a 1L container (that I can cover a lid) and complete with water wich is around the 840ml.
Wash the almonds, put in the 1L container and complete with water to soak overnight (you can soak for 8h but the ideal is 24h).
On the next day, blend together the soaked almonds WITH THE WATER that was soaking it, dates and vanilla for 5 minutes. Strain with a clean cloth (or cheese cloth) and save the solids to make THIS amazing recipe 🙂
